I am looking through some recipes - some call for a 'double pitch'. More specifically, I am looking at this Pliny Clone and wonder what the process for DP? I assume at this point it is simply add two yeast packs at time for pitch...

You don't need to double pitch if you make a big enough starter. Do a search for starters and use the pitching rate calculator at mrmalty.com to calculate how big of a starter you need to make.
