Honey Beer - Some Ideas Needed

Here's my "barebones" recipe so far. I'm a Partial Mash brewer - this is a 2.5G batch.

Sadly I just found out that Honey Malt is impossible to get in the UK, which made up 0.5lb of additional malt originally. I'm stuck for any extras, but I would like this to be unique - smooth (as in not sharp,) light and sweet. So here's what I need figuring, or need to figure, out;

- Is 1lb of Honey too much and should I look for other options to add a sweet flavour?
- What other malts or adjuncts would suit this type of beer?
- How do I prime using Honey/Golden Syrup? I'd imagine it needs mixing with water a little, but how do I get the right quantity? I'd also like to steep something in for flavour or "nose" at this point, like you do with ginger etc - what would work? :)

All of the honey sweetness and flavor will ferment out. The more honey added the more potentially dry the beer could be. May try adding lactose (milk sugar) or back sweeten with splenda. I would also lower the ibu s if you want to take the "sharpness out".
