Last night I racked off a one gallon batch of elderberry. I used the 3 gallon carboy as primary and it sat there ten days 'til it slowed almost completely. I took a tiny taste and was surprised how pleasant it was already. Will this remain a dark purple color or can I expect some clearing over the next 3 or 4 months?
