Milled grain shelf life

2 months ago I purchased 12lbs worth of milled grain. I havent had the time to brew as intended and they are still sitting in a well sealed paper bag in my pantry. I live in AZ so its extremely dry here so no humidity issues are in play. Would you take the chance in using them to brew?
 
Absolutely. I have no scientific basis, or even anecdotal evidence that it'd be OK..

But I'd darn sure try.
 
I have done it with grain well over a year old milled stored in a paper bag in a basement. You will be fine :mug:
 
I have also done it with milled Vienna grain at 11 months.
I suffered from a 2 point gravity loss(shooting for 1040 and got 1038). The only "real issue" I had, and it was by no means bad, was that I got a gingerbread aftertaste. It was subtle enough to just be there and be very pleasing.
