I will be embarking on a lambic project soon, and will be trying the dowel through a rubber bung and into the carboy method first. I will be leeching out some of the tannins by soaking it in some commercial wine first and then also in a "table beer" but I was wondering if I should toast the dowel in the oven a bit first? It is raw white oak at the moment.

Thanks! :mug:

Well, I did it anyhow. 365F for about 2 hours. Certainly on the milder side of things, but that's what I'm going for since I'm going to be using it for beer, not spirits. Will report any results when I get them.
