I have this idea to do a quad this weekend, but the only yeast i have is a saison yeast. I wonder what that would be like:confused:
any thoughts? anyone done this before?
 
Well a quad typically has a huge gravity, and saison yeasts are notorious for getting stuck, I think attenuation is your biggest challenge.
 
White labs Saison II (platinum strain) is a workhorse. It chugs right through anything I've thrown at it. It fermented a batch to 10% ABV with a final OG of 1.007 (all malt) at 65 F with only an occassional swirl to keep the yeast suspended.
 
i may try to blend a saison yeast with a packet of fermentis s-33. i have a huge amount of the saison yeast compared to only 1 packet of s-33, so will the saison yeast overpower the s-33?
