I have never brewed a Koelsch b4 and wanted to brew a strong version.

How does this sound 4 all grain @ 155*F Mash for 60min?

10.00 lb Pilsner (2 Row) Ger (2.0 SRM) Grain 76.9 %
2.00 lb Wheat Malt, Bel (2.0 SRM) Grain 15.4 %
1.00 lb Rye Malt (4.7 SRM) Grain 7.7 %
1.00 oz Pearle [8.00%] (45 min) Hops 21.8 IBU
1.00 oz Hallertauer [6.40%] (60 min) Hops 19.0 IBU
1.00 oz Saaz [3.80%] (15 min) Hops 5.6 IBU
0.50 oz Licorice Stick (Boil 60.0 min) Misc
2.00 items Whirlfloc Tablet (Boil 15.0 min) Misc
1 Pkgs Kolsch Yeast (Wyeast Labs #2565) Yeast-Ale
 
Also, I think that mash temp is way too high. I think something around 149 would be better.

Licorice is something I put in all my brews. It gives a nice silky finish. The rye should give it a nice dry finish. Silky dry high alcohol Koelsch goodness is what I am aiming for.

I could not remember if mashing at high temps or low temps creates a dryer finish. Any idea?

Mashing on the lower end (150 or lower) will yield a drier beer.
