steep the specialty grains before adding the malt extract.

That's what I thought, thanks. I'm on my 4th batch of Irish stout, and the first three were just a little off. Either too bitter, or not enough flavor. Same recipe every time, just variances in preparation. I just wanted to make sure cause the recipe called for boiling everything at once , which I've learned is baaad!
