Does anyone know if C02 can go stale?. I know that 02 can develop an odd smell if left in the tank to long. My co2 is about a year old. My last two kegs have develop an somewhat bitter flavor. I have brewed the same style of beer, and used the same yeast. The beer tasted good when I transfered into the kegs. After letting it sit on c02 for three weeks it now has a diffrent taste.

The taste wasn't there when the co2 was new.

I got my CO2 tank from SWMBO's brother from his college days, some 3 or 4 years ago. There was some CO2 in there still and it worked just fine when I started using it.

IMO, no, it won't go stale. There are a lot of factors that can go into your beer's flavor changing over the course of three weeks.

I got a 20 lb bottle from my buddy.

The hydro date is 1974.

It is still full.

He got it from the house he bought, which hasn't been lived in for 15 years.

I just carbed two kegs with it.

They taste great :mug:.

CO2 does not "go stale" unless there is some chemical that can bond to it. In stell/aluminum tanks there is nothing there that would do this.
Having TOO much CO2 in suspension can cause a bitter taste though..........
