The most important part is at flameout cool wort to 180f then steep the Cascades for 30 minutes then cool the rest of the way.

I could drink ordinary bitter every day. For the sake of variety, I haven't brewed it again, but will probably do another bitter of some sort soon. I'm saving my pennies to go to the UK and drink the stuff on cask, and maybe see some sights along the way.
