Why do boil volumes change?

Why when I always make 5.5 gallon batches do some beers call for 6.3 gallon boils and others for 7 gallons in beersmith? Shouldn't the boil-off always be the same?
 
There's boil-off, expected trub/break.

Boiloff rates can vary with the burner used, intensity of the boil and the relative humidity.

Are you using the same equipment profile in Beersmith? It calculates boil-off rates and boil volumes from the equipment profile you enter.
