Hello,

Kinda a noob question. I am making a batch of Peach wine from fresh peaches. I blended the mixture and added k-meta. After 12h I plan to add PE. Then 12h later pitch the yeast.

My question. Do I let the mixture sit open air? or put it in the primary with a airlock? or refrigerate?

Cover with clean towel and secure with a rubber band chain with a paper clip hook. Stir each day to push fruit down and break up foam cap. Mike
 
^ what he said. My curent white grape peach wine had a pretty good cap of peach pulp but if you have enough pectic enzyme then it will break down and after 5-7 days it will be all good.
