I cultured the yeast from two bottles of Oberon last Sun and today (Friday) there seems to be some activity in my flask. I have an obvious traub on the bottom of the flask and some co2 bubbles on the top of the wort. I started with 200ml water and 20g of DME with a little yeast nutrient.

When should I step this up and how much more wort should I add?

Thanks!

how big is the beer you'll be making with it? once you see the activity or krausen die down (is there any krausen?), i would think you can either step it up to 1L, or refrigerate and pour off the spent starter beer and make it 1L. after this, use for a beer or step up again to 2L or however big you need for the beer you plan to make with it.

The beer I'm going to use the yeast for is around 1.056

I haven't seen any krausen yet, but I get the feeling that the yeast is just getting started. I'll probably give it a couple more days before adding anything.
