This was an 8 gallon batch that I split into two 4gal batches. Half was on WLP560 Saison (exclusively from Austin Homebrew) & half was on WLP029 Kolsch. The initial idea was to make a little bigger (and better) version of Uinta Wyld.

Full 8gal Grain Bill:

13.5lb US 2row
1.5lb Red Wheat
1.25lb Carapils
1lb Crystal 20
1lb Crystal 10

BIAB
Mash Schedule: 107 for 30m, 141 for 30m, 156 for 40m
Mash out at 170 for 15 min

Hop Schedule (for 8 gals):

60m - 1oz Amarillo 9.3AA
5m - 1oz Amarillo 9.3AA, 1oz Citra 13.9AA, 1oz Simcoe 12.2AA
1m - 3oz Amarillo leaf 10.4AA, 1oz Citra leaf 15.6AA, 1oz Citra 13.9AA, 1oz Simcoe leaf 14.1AA

I used Tinseth for hop bitterness calculations when I made the recipe & have since switched to Rager. Rager seems to value the 1 minute additions much more, hence the high IBU number.

Dry hops (both 4 gallon batches got these amounts, so this is the DH schedule for 4gals)

14 days in - 1oz Simcoe
16 days in - .5oz Amarillo, .5oz German Smaragd
17 days in - .5oz Amarillo, .5oz Citra, .5oz Simcoe, .5oz Galaxy
