Anyone have a simple all DME single hop recipe I can use to troubleshoot my issues?

I won't be able to get home to Beersmith before hitting the HBS.. If anyone has seen my super long thread about all my beers tasting bad, here is what I have decided to do.

Stop doing all grain and make a simple dry extract 2.5 gallon batch using all different gear.

Picked up a 3 gallon glass carboy to avoid any plastic during fermentation.
This should help test my sanitizing steps, incase I'm not cleaning the plastic right.

I have a simple 5 gallon pot no valves or false bottom etc so I can rule out my valves and thermometers etc.

Ice bath in the sink to rule out my chiller.
New auto syphon just incase.

I was hoping to just pitch 1 tube of wyeast straight in, as it should only be 2.5 gallons max going into the fermenter. Thats enough for a low gravity beer I assume

Want to avoid LME since I don't think this place moves a ton..

So does anyone have a simple 5 gallon I could cut into 2.5, or a 2.5 all DME recipe? Like a pale ale or amber ale style probably.

Cliffs:
2.5 gallon batch
all DME
I can steep if needed
no yeast starter (less to risk)
low to moderate abv 4-6

Will be kegged.

how about:
3lbs light DME
1oz cascade (or hop of choice) @ 60
0.5oz @ 15, 0
S-05 or notty (cheaper than buying liquid)
that gives you about 1.054OG, ~30IBUs (depending on AA%)

Simple as that huh?

Thank you!
