Planning on brewing this in about a month. Thought I'd get some feedback beforehand:

Boil: 7L Batch Size: 10.25L
OG: 1.047 FG: 1.010
IBUs: 24.8

1.0 kg (2.2lb) Buckwheat, Wet Roasted Medium - Steep @ 68C (155F) 30min
0.5 kg (1.1lb) Millet, Wet Roasted Medium - Steep @ 68C (155F) 30min
1.0 kg (2.2lb) Brown Rice Syrup - Boil 60 min
0.25 kg (0.55lb) Molasses, Black Strap - Boil 15min
0.25 kg (0.55lb) Maple Syrup, Grade C - Boil 5min

5,00 g Fuggles [4,98 %] - Boil 60min
10,00 g Fuggles [4,98 %] - Boil 30min
10,00 g Goldings, East Kent [6,00 %] - Boil 15min
10,00 g Goldings, East Kent [6,00 %] - Boil 5min

5,00 g Irish Moss - Boil 15
100,00 g Malto-Dextrine - Boil 15min

1,0 pkg SafAle English Ale (DCL/Fermentis #S-04) Rehydrate 30min with 250ml warm water 5g Yeast Nutrient and 30g granulated brown sugar

I plan on leaving it in Primary for 2 weeks then bottle, 3 weeks in bottle with 68.5g Dextrose for a carb level of 2.5vols

This is modified from a previous version I did documented in this POST on the Thirsty Engineer Blog

That version was my first attempt and it came out pretty good, though unbalanced.

Comments/input appreciated. :D
 
Recipe looks good. Nice hop choices for a brown ale. I would definitely add some yeast nutrient, though.

Good point, I edited the recipe, adding my normal rehydrating procedure which includes yeast nutrient and a little sugar.

So when I finally got around to brewing this beer there were some changes I made:

Boil: 6L Batch Size: 15L
OG: 1.055 FG: 1.018
IBUs: 243.1

Psuedo Mash
0.92 kg (2lb) Buckwheat, Wet Roasted Medium
0.47 kg (1lb) Millet, Wet Roasted Medium
0.38 kg (0.84lb) Amaranth
0.25 kg (0.55lb) Flaked Rice

Additional Fermentables
0.35 kg (0.77lb) Brown Rice Syrup - Boil 60 min
0.35 kg (0.77lb) Molasses, Light - Boil 15min
0.35 kg (0.77lb) Maple Syrup, Grade C - Boil 5min

15,00 g Fuggles [4,98 %] - Boil 60min
15,00 g Fuggles [4,98 %] - Boil 30min
15,00 g Goldings, East Kent [6,00 %] - Boil 15min
15,00 g Goldings, East Kent [6,00 %] - Boil 5min

5,00 g Irish Moss - Boil 15
100,00 g Malto-Dextrine - Boil 15min

1,0 pkg SafAle English Ale (DCL/Fermentis #S-04) Rehydrate 30min with 250ml warm water 5g Yeast Nutrient and 30g granulated brown sugar

For the Psuedo Mash I ran the Millet, Buckwheat & Amaranth through a corona mill to a rough meal. This and the rice flakes went into a kettle with 4.5L of water.
1) Brought the mash up to 40C and held for 20 minutes stirring constantly.
2) Raise temp to 50C, add 50ml Beerzyme BG, held for 20min stirring constantly
3) Add 1.5L water , raise to 65C add 50ml Beerzyme Multi and hold for 120min, stirring occasionally
4) Move to Lauter Tun, add 1.5L water at 75C
5) Lautered off 4.5L at SG = 1.052
6) added 1.5L water SG = 1.042 and started boil

I let it ferment for about 2 weeks and then bottled with 100g dextrose.

When poured this beer has a beautiful light fluffy head that lasts a little with and leaves some nice lacing on the glass. The colour is a medium caramel brown and the flavour is malty, grainy with a nice balance of hops. I think this is my favourite beer so far!!

I got the Beerzym from www.brouwland.com, it's my main resource for supplies here. Its made by a company Erbslöh. They do all different kinds of enzhmes for brewing and wine making.

That site is pretty cool. It has a lot of interesting stuff on it.

Also, nice beer. Looks tasty. It's making me crave something less hoppy than what I currently have. Still waiting for that peanut butter beer though. ;)
 
Here is the Beerzym Multi Technical Product Sheet.

I skimmed through it quick and the enzyme contains Alpha Amylase, Beta Glucanase and various Beta Amylases.

I'm starting to reconsider the peanut butter ale. Peanut butter isn't really very common over here and I finally took the time to figure out how to get my hands on the PB2 peanut butter powder. Looks like it'll cost about $135 USD just for the 1kg of powder in my recipe. Gotta sell a batch of beer that costs upwards of $165 USD to SWMBO first.
