I don't have a beer cellar yet, but have started buying beers for extended aging.

and I just bottled the 8-8-8 RIS and some will be added to my long term inventory.

Not actually a cellar, just a cool closet in our basement apt.
 
I've got ~55 bottles now, I've started an excel sheet to keep track but it is not finished yet. That's a nice collection you've put together. Please keep us posted on how the beers are aging,etc. I think it would be great if we kept the community informed on how a beer is drinking now vs. a year ago, etc. so that we can seek out a certain beer for cellaring or know that a certain beer is definitely worth keeping longer. For instance, I learned from reviews on beeradvocate that Ommegeddon is just starting to show its stuff, so I'll hold onto my bottles for a while longer at least.

I'd love to have some Kuhnennn - Rasberry Eisbock 2007, never could find any though. :(

We don't have cellars here in Florida, so I just built one in the garage.

I am insanely jealous of you right now and I think you really just have a fridge full of BMC, please PM me with your address and I will come verify your inventory in person (after midnight, wearing a ski-mask:D).
 
Where do you guys find all these? Definitely not at your local brew-through! right?! I would love some orval but can't find it anywhere around me.
 
I'd challenge most anyone here to contend for the "I don't have a good beer shop close to me" title. I have to take advantage of any trip more than 300 miles to get some good commercial stuff to stock up on.

I was in Omaha recently and pick these up at a GREAT beer shop called Brewtopia. There is a forum member by that name, don't know if there is a connection.

I know these aren't real rare, but as you can see on the left I favor an IPA, but I'm trying to grow out of it and try more and more styles. Im really looking forward to the Trappistes.

Tis sooooo good to taste it! I was going to buy a case every year (at cost btw) and it just didn't happen. Maybe I'll go every other year.

I noticed some people aging Hopslam. I know the hops diminish over time, does it pay off to age it?
 
I can't imagine Hopslam would be any good to age, I watched a video of a guy doing a 2010 2011 vertical and he said the 2010 was not nearly as good, drink it fresh!

I am a little surprised to see IPA's in these lists. I thought hoppy beers need to be drunk soom while the hops are fresh? Won't the hops go bad?
 
I'll probably drink the Great Divide Aged Double IPA and Oak Aged Unearthly in the next couple weeks, but I've heard good things about cellaring Burton Baton.
 
The hops wont go bad they just fade into the background.
