So I've brewed a few ciders including Edwort's.

My question is has anyone brewed a cider using a Belgian Ale yeast? I am thinking the fruity/spicy flavors from the yeast could well complement a cider. Has anyone tried this before?

I've not done one before, but I pitched some WLP550 into a gallon of apple juice last Monday to see what happens. Used part of a starter I used for 6.5 gallons of beer. Fermenting around 68 F (low end of temp range).

I figure that by just doing a gallon, I won't be stuck with too much if it's overwhelming.

I have some washed Belgian Ale yeast lying around so I think I'll have to try it too.

i just recently brewed a perry using 1388, Im hoping that the pear esters I normally taste in it really help accentuate the flavor
