Got some sausage making equipment for Christmas and breaking it in today. My first batch of garlic jalapeno brats all mixed up and ready to be stuffed.

Did you get a stand-alone stuffer? I'd sure like to get one but I have NO IDEA where I could store it. Right now I just have a combo grinder/stuffer thing that works well for the grinding part, and is tolerable for stuffing.
 
Got a stuffer from Grizzly after hearing what a pain it is to stuff with a grinder...turned out pretty good...still need more practice but I'm happy with my first attempt.

Looking good!

The most important thing I have learned about sausage making is to test-fry a bit of the sausage before you commit to stuffing. Don't trust the recipes. If it doesn't taste great coming out of the frypan, it sure won't taste good in a casing.
