Lost Abbey has a sign above their barrel room that says, "In Illa Brettanomyces, Nos Fides," which roughly translates to, "In the Wild Yeast We Believe." You could alter it to, "In Illa Saccaromyces, Nos Fides."

Actually, it would be "...we have faith," which I think is a better translation. It's easy to believe in wild yeast--they exist--but to have faith that they will work with you and produce an excellent brew... well, that is a step above.
