Down here in Western Australia, finding apple juice concentrate was proving difficult. I managed to find some and order a few bottles and found they contain potassium sorbate.

I was going to use the concentrate to prime and backsweeten.

If I was to bulk prime with a sugar or dextrose and let sit to carb for a while and add the AJC for sweetening immediately prior to bottling, would this work?

Priming will only produce carbonation in a sealed container, like a bottle. Otherwise it will just ferment normally and the CO2 will escape out the airlock. Bulk priming in a container that is not designed to hold pressure will result in a busted fermenter and a large mess to clean. Unless you have a kegging setup you're gonna have to sweeten with sugar too.
