For what it's worth, in Brewing Classic Styles...

For what it's worth, in Brewing Classic Styles John Palmer recommends adding the late addition at flame out. That's the way I've been doing my partial mashes for the last year and a half.

I made a traditional mead a while ago with 15.4 pounds of honey and 5 gallons of water which had an OG of 1.096. That amount of honey and water ends up being slightly over six gallons of must.

Do you have any brew on premises places nearby? I pay about $1.85 a pound for LME from a local shop. They go through a lot of it themselves so it's pretty much guaranteed never to be stale.

I've ordered from him a few times in the past, both for pickup and shipping. The shipping IS expensive, but that seems to be pretty standard when Canada Post is involved. I definitely recommend him...
