Like Bobbin said gravity readings would help a lot, but it sounds like what you think, about the yeast having crapped out. Which would explain why the carbonation isn't really forming in the bottles....

Yea I'd give it more time, at least 12 days or so before you worry about the clarity. But if you aren't in a hurry and would really prefer a clearer beer give it a month and you should be good.

What size is your pot though? Your stove might only be able to boil 3 gallons but do you have a 5, 8, 10, etc, gallon pot? If it's only a 5 gallon pot I imagine you can get about 6-8# of grains....
