Mine was basically flat, which I think was from not enough corn sugar and the high ABV. I think with kegging I can control it and get it to the level more mirroring commercial variations.

Lay a couple 2x4's on the ground parallel to each other and set the kettle on it's side between then. This will help it from rolling left to right if your foot happens to slip away a bit.

Looks good, and if you want to do dry yeast without having to rock a starter, I did a RIS using US-05 that made it up to 13.75%abv from a yeast cake.

Seems like most add the coffee to taste...
