That is ferment temp. I generally shoot for a room temp at the bottom of the yeast's range knowing the actual ferm temp will be 5-8 degrees above that.

I prefer any that are from an actual LHBS even if it's on the interwebs. Lemme clarify, Austin or Midwest kits (in my opinion) are much fresher and come with better instructions for newer brewers...

Just went back to check this. 4 weeks. That's perfect in my book. The yeast will continue clean up the beer while in the bottles albeit more slowly.

Maybe that's not it. Just a problem I've had. Even in the winter if my basement is 65* the beer at active fermentation could easily be 72 or more.

A fruity off flavor is usually fermenting too hot. Green apple specifically I've never experienced. Or at least I'm able to say specifically green apple rather than fruit in general.

Yeah those QDs are a bitch to get pushed all the way down sometimes. There should be a discernable "click" when fully seated. Lube helps a bunch.

I lager in the keg usually now. I blast the keg with 40psi when I rack it over at room temp. Toss it in the kegerator and forget about it. No need to leave it hooked up.

That's how I carb. Set it to serving pressure and let it go a couple weeks. You don't have to go higher unless you're trying to do the fast force carb method to you're carbing above kegerator temps.
