You're going to have heat loss though the wall of the keg. Unless it's insulated I'm not sure you could get enough energy transfer to heat all of the cider to 160. Even with insulation that's a lot...

What I have is powdered malic and citric acid from a HBS. Both are packaged by L. D. Carlson, neither package has any labeling regarding TA or pH. I guess I'll have to use the empirical method.
