I've dropped a submersible aquarium heater in one in a pinch, as well as taped bucket heaters to the side....however, i've picked up a cartridge heater to try. I'll report back on how well it works.

It's not the nitrogen that gives a stout it's creaminess and smoothness...it's the lack of co2 in the served product....

Did you carbonate the beer first on regular co2? Usually if you are getting massive head while on nitro blend it's a sign that the beer has been overcarbonated.

you only want about .7-1.1 volumes...

Pot surface area makes a big difference - 5500w for me gives a mediocre boil even at 10 gallons in my 25gal pot - and very strong boil in the keggle, but the 25gal pot has a lot more surface area
