Going to brew up 10 gals of this over the weekend and try a single decoction at 122 F for 35 minutes with a raise to 154 F for 45 minutes. Got the starters of 1056 going tonight.

If you do it in the keg, let it sit for 4-5 days at room temp. Then, toss it in your keezer or kegerator and it will be just fine.

You can forgo using a starter with dry packets of yeast. You will want to use that starter kit for any White Labs or Wyeast yeast varieties though.

I bought a chest freezer to use as a fermentation unit. It's just too damn hot down here to do anything other than a saison in ambient temps, and too expensive to keep a house any cooler down here....

Thanks for the information. Actually, the 1968 made an outstanding Common Room. I'm at work at the moment and don't have my notes, but it fermented down to the 1.014 range with close to 5% ABV...

Been here as well. First AG batch with a keggle boiled over. Even with a big boy kettle, set it and forget while bringing wort to a boil is still means for potential disaster.
