Does your reading suggest the fermentation should be "actively" fermenting for 2 weeks? That seems unlikely if you pitched the right amount of yeast. There are a lot of stages in the yeast cycle...

It might not be standard to have bitterness in mead, but a little bitterness sure doesn't do beer any harm. Might be delicious.
