I don't know about wine nutrient, but GF beer doesn't absolutely require nutrient.

I tried it both ways and seemed to get faster, more fervent fermentation with it, YMMV.

I think that would work fine. And to simplify the process even more you could use the advice igliashon recently gave me and skip dry hopping by adding a bunch of hops at flameout.

The hops need to mellow a bit, but its perfectly and very enjoyably drinkable.

I keep mine very cold. In the high 30's. I have me freezer set at 2 degrees celcius.

Primarily though, I think it is just personal preference.

Maltoxdextrin is supposed to add body to you beer, and I use it in most of mine.

It can be added at any stage (boil, primary, secondary, bottling) and that is probably how I would do it at this...

I may make two batches next fall. One with my current recommendations and one with those as well as adding some Jack Daniels...

I'm definitely interested to hear your results. The LHBS just recommended I give this stuff a try, but I'm leary of going away from the tried and true S-04.
