In agreement with everyone else, that's a bit too much crystal. Also, my personal preference I dont really like chocolate malt in an ESB, but that's my personal taste.

That sounds a lot like the bitter I brewed a few days ago, but I used mostly millet with just a small percentage of buckwheat. That site made it sound like buckwheat would give an authentic beer...

I love dead guy, I think it is a great beer. It is not an extreme beer, but it is an "americanized" adaptation of a traditional beer.

The diastatic power of millet is pretty good, not quite what you get from barley but it can just about convert itself. I do an iodine test while mashing, and it usually converts itself just fine.
