After fermentation, flavor changes from temperature can be from accelerating spoilage. If you're going to leave your batch at < 70 for a month or so, then move it to a keg I wouldn't worry too much...

I get what they're trying to do and I get that it's a play off the old "free as in speech" vs "free as in beer" distinction, but "open source beer" has always kind of irked me because recipes are not...

I'm interested in this too, I've had a few beers which I can only describe as "creamy" and want to be able to replicate that. I'm not talking about milk stouts either, but an Oktoberfest and an IPA.

I used to get a flavor that I could best describe as "metallic" when I used canned LME. When I switched to fresh bulk LME my beers improved immensely.

Are you trying to run Beersmith from the CD? I think it needs to be able to write to the .bsm files in order to run. Try copying from the CD to your hard drive.
