I brewed a midwest IIPA In June of 09 and I just had the last one and It was Awesome. I also store in my basement which is 50 to 55 degrees. I think they get better with age.

No I am shooting for an APA, I want less hop character then an IPA. So I need to adjust the hop accordingly.

Not sure how, I guess I should leave the Home Grown Chinnoks out?

they are dried and in the fridge, but today I took them out and there were same insects in the bag. They were in the hops of course, I am thinking of not using them at all now.

So you think 1/2oz of cascade with both chinook, or 1/2 oz cascade with 1 chinook and maybe add other oz of chinook at the 45 min. mark of the boil. I just do not want to have a overly bitter beer.

scooby, these are home grown chinook hops though. The AA will be lower than store bought though. Or do you think the 2 full oz. for bitering would be good or over kill.
