I've still have a few of these in the back of the fridge. About a month after conditioning they tasted really great. clovey, sharp apple, and yeasty. It's acually really hard to describe the taste....

If it hasn't mellowed after a few weeks check your water profile. High calcium, bicarbonate and sulfate levels can accentuate bitterness. Most municipal waters are pretty soft though.
