Not a lot of viable yeast(sacc or Brett) left after 5 months and pedio/lacto take longer to get going.

Plus the ECY sour blends have taken a good while to get going fresh, IME.

Trust me, I wouldn't have signed up if it HAD to be local. Kind of tough when you live in a state that makes not one sour beer. My recipient will be getting beer that he can't get in his area.
