AS far as Hops, you'll need some really old. low alpha acid hops.... Willamette, Goldings, fuggle or Saaz will work.

Traditional Torbid Mash: From Page 141 of Wild Brews by Jeff Sparrow

Assume 2 quarts of water per pound of grain....

Can't really tell since left the flash on your camera. The glare is right where we need to see. But if it looks like it has a skin and not bubbles, I'd say it's safe to say you have an infection.

Well I made a 5 gallon brew almost every weekend over 2008, I may be over limits but I have 5 adults living in my house (3 of which know how to brew)........ So BATF can figure it out for themselves.

Or you could just toast some 2-row for 30 minutes @ 275F, to me doing that gives a richer almost nutty/bready flavor.

Dude, Cut back on the smoked malt to around 1/4 - 1/2 pound.. the rule of thumb with smoked malt is "a little dab will do ya".

Other wise the recipe looks solid.

OK I'll Jump on the bandwagon, I usually do my own recipes and not other peoples. But this recipe sounded so good I have to try it.
I get my Hop order this Monday and I'll brew it up New Years Eve.
