what about leaving the grains at room temp? I've always been told that they will stay fresh for a year uncrushed. I wonder how much it would extend the life to be vacuumed sealed

I'm telling a friend how to make a cheap apple wine - I can't remember at what temp I sanitized my sugar or for how long

I want to say 170 for 20min? Does that sound right?

Steeping grains add a huge amount of flavor - Your right that crystal malt doesn't add much fermentables but it add color, mouth feel and flavor

And no - you shouldn't substitute twice as much...

If your doing all grain I wouldn't sweat it at first but as I got better at doing it (or if I got an unexplained off flavor) and wanted to dial in all my parameters...
