Just break material/trub. It will settle out and make a tight cake on the bottom.....probably 1/4 to 1/2 gallon worth. When fermentation wraps up you will see the yeast layer on top of it.

Going to be tough to get a good reading if there is that much sediment as the viscosity will cause the hydrometer to stick. Can you get a clear, sediment free sample after it settles out a bit?

So I guess the rule here is to not let it just sit on the mash. I think most folks that do overnight mashes are recircing through RIMS/HERMS to keep temp. So run it off into buckets or your keggle...

I use fermcap in everything and I've found it to be strain dependent as to whether it blows out. Pacman and hefe yeast....every time. English strains.....never. Maybe I have some bunk silicone.
