There's someone somewhere on the forums here who made a pine mead. Turned out to have an "earthy" flavor. Might that be something in line with what you're looking for?

It depends on the drink. For whiskey or mead, I'll take an old fashioned glass, though I do also use wine glasses for mead. For beer, got to be the imperial pint glass.

Best bet is probably to start with store bought juices and concentrates. Once you have a recipe you feel turns out well, then move on to trying it with fresh fruit if you can find a reliable source...

I just use Excel. It's hard to beat a good spreadsheet for doing things like calculating the ABV for you automatically.

Just bottled my Strawberry mead. I only brewed it on Valentine's Day, but it tastes pretty good now. I can only imagine what it'll be like in a year or three.
