Fits more in the braggot catagory since my efficiency is low therefore half the fermentables are honey. So I guess not a mead but not an ale its a braggot. I just fear with the mead will be to sour...

I was wondering if a 100% Brett Lambic would be possible. Ferment with Brett b trios then pitch yeast slurry from my lambic. I think it would be good but was wondering if anyone has tried? If not...

I know typically lambics mature over years but I just tasted mine after 9 months and I can't possible believe it can get better. Tart with mineral funk like font. Lambics. My fear is it will change...

Look in to cherry republic out of Michigan they have dried cherries and cherries in the can that should be fine. Will use them in my lambic later this year.
