Help! Costly mistake; can I salvage?

Same here. I had two packs of 1056 semi-swollen. I was just able to pop the inner pack on each package with lots of force.

I've gotten great esters (mainly banana) from underpitching (a smack pack of 3068 into 1.056 OG) and fermenting warm at 76.

I have one fermenting right now.

Only time will tell. Wait it out and try a bottle every other month or so.

It's a longshot and I know you've already bottled, but you could make a second batch and mix the two.

DMS shouldn't be an issue if you're just boiling the hops.

You'll also get better hop utilization without boiling the extract.

I did a BIAB of NB's All Grain Cream Ale last month and added 1/2 pound of flaked oats. This gave the beer a nice, thick, heavy foam head that retains the entire glass.
