Use it. I keep a starter constantly going and just feed it every 4-6 weeks. Like calder said though, if its kept cool they will be in better shape.

Leave it, hop flavor and bitterness will fade with age. Depending on your ABV and a few other things it should age just fine. Let it be and get another beer going. Practice makes...well... more beer.

I have had real good success with that yeast...

I have had real good success with that yeast competition wise and I like the flavors it kicks out even at lower temps so I figured why not bug one up.

I pitched the 3711 and the Roselare at the same time in the beginning and when I racked to secondary it was already down to 1.002. I should have known better using the 3711 since its such a work...
