Man the last time I had a fermentation like that I didn't catch it soon enough and the stopper blew out of the carboy. I ended up losing 1.5 gallons easy but it turned out to be an amazing brew. Hope...

If it were me I'd make an APA and an Amber. I like to keep it simple, but I don't usually cater to the lowest denominator.

Co2 will be more dense meaning it takes up less volume and therefore the reading will be lower. I keep mine in the fridge too and it's always sad seeing the needle move down after filling it up.

Did you correct for temp? That's really not to much of a difference, I wouldn't worry unless the beers you made call for a FG on the lower end of the spectrum.
