There's a documentary on Netflix called Somm....

There's a documentary on Netflix called Somm. Shows how ridiculous that whole world is... and I'd say the same goes for the world of beer judging.

Grandpappy's lawyer's rice wine recipe

My dad recently unearthed his father's rice wine recipe. Well, his father's lawyer, Harvey Kennedy, Sr.'s rice wine recipe. It goes like this:

3 lbs. rice
6 lbs. sugar
2 yeast cakes or packages...

Mine doesn't "burn like it's acidic"(sounds like you got some rice wine vinegar on your hands) and it tastes like white wine. If you're not a fan of wine, this probably isn't for you.

I think he added the water after fermentation...

I think he added the water after fermentation stopped which supposedly reinvigorated the yeast by lowering the ABV.

Most folks are adding juice to the finished product. I wouldn't put fruit in the jar, fearing it might result in infection.
