Thanks for the input. This actually sounds good to me, I prefer beers that aren't overly bitter, and I've found that most of the beers I've made have come out a slight bit more...

I had this a couple nights ago. I enjoyed it more than I thought I would. A great stout without any of the harsher, roasted flavors that US brewers sometimes go for.

I've done some ready and I think 2.5 would be best for me actually, I could do a full boil since 2.5 is usually the amount I boil for my 5gal batches. I haven't stepped up to all-grain just yet.
