Flaked wheat gives it body just like the real thing. If your to dry try using your mash temp. So if your mashing at 152 try 154. Could be your temp is off by 2 degrees.

WLP001 works great for this brew. I have my second one on tap. I raised the honey malt from 4oz to 5oz. 5oz of honey malt seems to be about right any more then that I think its going to be to sweet.

Also try spinning the lid 180 degrees. May sound stupid but my kegs only seal with the lid on one way, if its on the other way it will not seal no matter how much grease or psi I put on to it.

You really don`t need the S04 at bottling time unless your trying to go for a different taste. Lager works just like ale at bottling time. I never had a problem with bottling lager even after 8 weeks...
