I usually brew 7.5 gallons batch and the volume of the malt is almost always the same but this week end i'll brew a batch twice this size.

My question is a certain amount of malt will cool down...

Personally I leave it in the primary until bottling without any ill effects.

I don't think you will have any negative effects from the longer boil. You may end up with a slightly higher abv but that is it.

Man that is expensive. Sounds like a good opportunity to start being a distributor of liquid yeast in your neck of the woods.

I have to say that the T58 sounds like a good choice for that beer.

You can add the sugar anytime you want.
