Yes it is calibrated correctly. I do make the temperature adjustments when needed. My OG is generally within .002 of where it should be.

I typically do 3 weeks. I will start using a nylon hop bag for beers like this. Just hadn't happened before so I was curious. Normally my strainer catches it all. Thanks for all the help.

Yes I used Irish moss. I did run it through a strainer though. Don't like plastic. It's a long story involving a midget a mannequin and a unicycle.

I brewed an IIPA today with an OG of 1.08. Used 8 oz of hops. First wort hopped and did a 90 minute boil. 3 hours later it looks like this! What the hell is it? My guess is sugars. 173514

I did this with a batch of barleywine that wouldn't carb up. Just be sure to minimize splashing and glugging. Purge when done, carb and enjoy.

I have found that the 6 gallon carboys with the ridges are weaker than 6.5 gallon smooth ones. I had a ridged one break on me while cleaning it with a carboy brush.

I don't think it will make you sick. It might not taste the greatest. The layer on the bottom is probably yeast and a little sediment. Still being carbed is a plus!

Just stir the crap out of it. By the time it hits mid to low 70's you're good to go. This will oxygenate your wert very well in the process.
