For the candy mead it is only a few months old so I dont know how much the flavours will separate, potentially ruining the candy flavour. Its a bit of everything mix.

I decided to add canvas labels to the rest of the bottles. Not just the tags. Will write any info on the backs of the hanging tags. Leave the labels simple.

Do you mean mead only or have you never tried different yeasts before. I have never tested mead but with ciders it changes the flavour dramatically. Its an extremely important part of brewing.

Rewarewa is quick. My 20l batch should be done around the 9-10 day mark I think as well. Stepped nutrients until 1/3 fermented and slight degassing. No sign of slowing down at the 7 day mark.
