Like landshark, i currently use the basement and can regualarly keep my temp at 62-64* but have never tried an imperial.

I have not used a marinade or brine with brisket before, and I had mixed results usually not getting the desired juiciness I was looking for. A mopping seemed to help a little but it took forever...

Add more extract... but then balance kind of goes out the window. You can add more speciatly grains to try and counter, but you should remember that most recipes are based on multiple failures...

My guess would be it was still fermenting/I didn't degas it. I don't take hydrometer readings on 1...
